Rosemary Ranch Chicken Kabobs

You may have noticed I haven't been posting much this Fall. I've had bad allergies and between that and running after my 2 1/2 year old, I am pretty wiped out at the end of the day. I'm finally on some medicine and when the frost starts hitting the ground on a regular basis the doctor thinks that will help too. I have lots and lots of projects in my brain and hopefully I'll be able to carry out more of them soon!

Well daily life with all it's errands and such still goes on. Ladies, isn't one of life's biggest chores trying to decide what to make for dinner? I love trying new recipes and this is my favorite new recipe by far. It only has to marinate 30 minutes, which is so great! It's made with ingredients that I usually have on hand and it takes blah, boring, chicken breasts and makes them bursting with yummy flavor.

The recipe calls for dried rosemary, but while I have it, I've been using fresh. This winter I'll have to try it with dried and try broiling it. But while there's a bit of sunshine left I encourage you to head outside and throw these on the grill. Grilling used to always be my man's job and he is so good at it, but he's been having to work long hours lately so I've started grilling for the first time in my life. Thankfully everything's turned out good, so far. If I can do it, you can too!!

I am so sorry that the allergies are getting ya, this year has been crazy, even I got them and I never have before. I hope you are feeling better soon, I know it is supposed to get cold this week so that might help. :)

  3. Lisa, thanks for the great recipe...can't wait to try it! I too suffer from seasonal allergies and a pharmacist a long time ago gave me this tip. Take Sudafed during the day and Benadryl at night. Works like a charm for me. Also using a Netti Pot works wonders. Feel better...I miss your posts!

  4. I wouldn't call it harassment exactly. ;) I am super jealous of your large rosemary plant. Mine didn't really do much this year and I wanted an excuse to make this again. YUMMO!

    BTW, where I come from we grill out no matter if it's sunny or snowy - -so this will come in very handy! (when I say "we" I really mean to say "hubby". No way I'm standing out in a bilzzard to grill anything! Hubby on the other hand will do just about anything for a hunk of meat!)

  7. Yum! I'm always looking for new chicken recipes - it can get so boring! I hope you're feeling better soon! I've luckily never had an allergy problem so I can't relate there but if it's any consolation, I get migraines which unfortunately are all year round xo

  9. I'm glad you liked the rosemary ranch chicken! And I'm sorry about your allergies. I have HORRIBLE allergies, too. I did immunotherapy for three years, which helped a ton... then I had a baby and got lazy, and the allergies came creeping back. Hate them, too. Hopefully yours die down with the cool weather. :)
